The Best Oatmeal Breakfast Cookies – Recipe

These cookies are the perfect blend of everything I love in a cookie; soft, chewy, moist and sweet. They make a perfect dessert or breakfast cookie.


The Best Oatmeal Breakfast Cookies

1 cup all purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sugar
1/2 cup brown sugar
1/3 cup applesauce
1 egg
2 tablespoons butter
1 teaspoon vanilla extract
1 1/2 cup oats
1/2 cup raisins

Heat oven to 350*
In a small bowl, combine flour, cinnamon, baking powder, baking soda, salt. Set aside.
In a separate bowl cream the butter, add the sugars, egg and vanilla and beat well.
Add the oats and raisins, mixing well. Finally, add in flour mixture and mix well.

Drop cookies using 2-3 tablespoons of the batter onto a greased cookie sheet. Bake until the edges are lightly browned, around 10 minutes. Place cookie sheet onto a wire rack to cool.
