Ingredients:
Manicotti Noodles
1 tablespoon olive oil
1 small onion
2 cloves garlic
1/4 cup butter
1-2 cups cooked ham - diced
1/3 cup parmesan cheese
6 tablespoons butter
6 tablespoons flour
3 cups milk
2 cups shredded swiss cheese
Directions:
In a large pot, boil noodles with olive oil - Slightly undercook the noodles
Drain and set noodles aside
In a skillet, cook onion and garlic - Add ham and cook
Stir in 1/3 cup parmesan cheese
Set Ham mixture aside
In a sauce pan stir in 6 tablespoons butter and 6 tablespoons flour
Heat for about 3 minutes constantly stirring
Continue stirring and add in 3 cups milk
Heat until thickened and then stir in swiss cheese
Remove from heat
Line a pan with foil and add 1/2 cup sauce to the bottom of the pan
Add 1/2 of the remaining sauce mixture to the ham mixture.
Fill the shells with the mixture and line on pan.
Pour remaining sauce over the stuffed shells and sprinkle with parmesan cheese
If freezing - Place directly into freezer. After frozen, using the foil that lined the pan, remove the entire block and place in a zip lock bag. Write the cooking directions directly on the bag
If cooking from the freezer either thaw overnight and bake covered for 40-60 minutes in 350* oven or bake for 1 hour at 300* then increase oven to 350* and bake an additional 30-45 minutes. Remove cover and bake 10-15 minutes more
If cooking immediately - Bake for approximately 30-40 minutes in a 350* oven.
Tip: This recipe will make 1 - 9x13 pan or 2 - 8x8 pans. For smaller families use the 8x8 size and save one for a second meal.
