Easy Lasagna Recipe – Freezer Meal – No Boil

This is an easy lasagna freezer meal recipe that will make a hefty 9x13 pan for a larger family or two smaller 8x8 pans.

Ingredients:
1 1/2 lbs hamburger meat
1/2 onion diced
1 garlic clove diced
1 cup spinach
1/2 jar spaghetti sauce
24 ounces cottage cheese
1/2 cup parmesan cheese
2 1/2 cups mozzarella cheese
2 eggs
no boil lasagna noodles

Directions:
Brown the hamburger meat with the onion and garlic.
Add the cooked meat to a large bowl mixing bowl.
Add in spinach, spaghetti sauce, cottage cheese 1/4 cup parmesan cheese, 1/2 cup mozzarella cheese and 2 eggs - Combine well.

In the bottom of an 8x8 pan lined with aluminum foil spread a small layer of the meat mixture. Cover with a layer of the noodles (I broke mine in half) and then repeat until you have reached the top of your pan. Sprinkle the top with half of the remaining cheeses.

Repeat for an additional 8x8 pan.

Freeze the entire pan overnight. In the morning, remove the lasagna block by lifting on the foil. Then place the lasagna in a zip lock bag, write the contents and cooking directions on the outside and place back in the freezer until ready to cook.

Cooking directions:
If frozen:
Remove lasagna block from the zip lock bag, but leave the foil attached. Place back into an 8x8 pan and bake covered in a 350* oven for 50-60 minutes. Remove cover and bake an additional 10-15 minutes
If cooking immediately: Bake covered for 30-40 minutes. Remove cover and bake an additional 10 minutes.
