Technically this isnt a recipe – more of a how-to.
Directions:
Preheat oven to 350*
Wash potatoes and "poke" them all around with a fork
Drizzle olive oil on the bottom of a baking sheet
Roll the potatoes in the olive oil to coat well
Bake:
1-2 hours depending on how many potatoes you are making at a time
Remove from oven and gather toppings while the potatoes are cooling
Once the potatoes have cooled enough to handle, make a slit on one side and gently push the ends together to open the potato
Scrape the insides out of the potato being careful not to break the skin
Mix the insides with your toppings
I used:
Butter
Sour Cream
Chives
Bacon Bits
Cheese
Stuff the potato skins with the topping mixture
Sprinkle with cheese, wrap in foil, and freeze
Thaw before re-heating in a 350* oven for approximately 15-30 minutes.
