Enchiladas (Casserole) Recipe - Freezer Meal
Ingredients:
Ground beef
Enchilada Sauce
1/2 can Corn
1/2 can Black Beans
Tortillas
Shredded Cheese
Directions:
Brown meat until cooked thoroughly (brown with onions and garlic if preferred)
In a large bowl, mix sauce, corn, beans, and cooked meat
Layer tortillas on the bottom of a pan. Top with half of the meat mixture, continue layering until the meat mixture is gone, ending with a layer of tortillas on top.
Top with shredded cheese
Cover in foil, label with cooking directions, and freeze*
To cook, thaw, then bake at 350* for 30-40 minutes
*I recommend using an 8x8 disposable foil pan. If freezing inside a reusable pan, line with foil so the frozen meal can pop out of the pan and be stored inside a large, gallon size, ziplock bag. Simply place the frozen block back into a pan prior to thawing. Don’t forget to label with cooking directions if freezing!
