Vegetable and Bean Fajitas (Meat Free Meal!) Recipe

The internet and social media seems to have all these “Fill in the Blank” Day participation games going on. One of them is Meat Free Monday, and while I don’t participate in any of them (throwback Thursday, flashback Friday, man crush Monday, etc) I do like the idea of the Meat-Free Monday one.  I didn’t really grow up liking meat all that much, so it’s simple for me, but having delicious recipes would make it much easier for those who are accustomed to having meat. 

Ingredients:
4 flour tortillas
1 green bell pepper, cut into thin strips
1 large tomato, chopped
1/2 teaspoon cumin
1/8 teaspoon ground oregano
1 can pinto beans
1 1/2 cup sliced zucchini
1 medium onion, sliced
3/4 teaspoon chili powder
1/8 teaspoon garlic salt
Sour cream, or salsa if desired

Directions:
Heat tortillas
Spray large nonstick skillet with cooking spray
Add zucchini, bell pepper, and onion. Cook and stir over medium heat until crisp-tender, about 5-7 minutes.
Add beans, tomato, chili powder, cumin, garlic salt, and oregano, and mix well.
Cook until thoroughly heated.
To serve, spoon 1/4 of mixture down center of each warm tortilla, top with salsa or sour cream, fold, and Enjoy!

*Black beans may be used in the place of pinto beans
