Baked oatmeal Recipe

Baked Oatmeal Recipe

I would say my kids love oatmeal, but truthfully, only one of them does. That one could eat oatmeal every single day for breakfast, lunch, dinner, and snacks; in fact, he has some days! This recipe isn’t what he is used to, but he can’t resist it.

Ingredients:

2 cups roll oats (not instant)
1/2 cup walnuts (chopped)
1/3 cup sugar
1 tspn baking powder
1 1/2 tspn ground cinnamon
1/2 tspn fine grain sea salt
2 cups milk
1 large egg
3 tablespoon unsalted butter (melted)
2 tspn vanilla extract
2 ripe bananas, sliced into small pieces
1 1/2 cup fresh or frozen blueberries, or mixed berries

Directions:
Preheat over to 375*
Butter 8x8 baking pan
In a bowl, mix together oats, half the walnuts, sugar, baking powder, cinnamon, and salt.
In another bowl, whish together milk, egg, half the butter, and vanilla.
Arrange bananas in a single layer in bottom of prepared dish.
Sprinkle two-thirds of berries over top.
Cover fruit with oat mixture.
Slowly drizzle milk mixture over oats, lightly tap baking dish on counter to make sure the milk spreads to the bottom.
Scatter remaining berries and walnuts over top.
Bake 35-45 minutes, until top is golden and oats have set.
Remove from over, drizzle remaining melted butter on top. Serve with extra sugar or maple syrup.

*You can prepare this dish the night before for an easy breakfast the next morning.
