Peanut Butter Brownies with Chocolate Chips AND Chocolate Ganache topping

I know I just did a Peanut Butter Brownie with Chocolate Chips Recipe – and it was delicious – but these are as different as the “same thing” can be. I much prefer the texture to these brownies than the last ones.

Ingredients:

Brownies:
2 sticks (1 cup) butter - softened
1 3/4 cup sugar
1 cup creamy peanut butter
2 large eggs
2 teaspoons vanilla
2 cups all purpose flour
1 1/2 cups chocolate chips

Ganache:
1 1/2 cup chocolate chips
1/2 cup heavy cream
1 tablespoon butter

Directions:

Brownies:
Preheat oven to 350* and grease the bottom of a 13x9 pan.
Line the bottom with a piece of wax paper and grease the wax paper as well
In a large bowl cream the butter and sugar.
Add peanut butter and mix well
Add in eggs and vanilla and continue to mix well
Slowly add in the flour, while continuing to mix
Finally, add in the chocolate chips
Pour the mixture into your prepared 9x13 pan and smooth the top down

Bake in 350* oven for 40-45 minutes
Promptly remove pan and place on cooling rack.

Ganache:
After brownies have cooled approximately 30-40 minutes on cooling rack you can add the ganache to the top.
In a heat-safe bowl pour chocolate chips.
In a small saucepan bring the cream to a boil - Pour boiling cream over chocolate chips and let sit for about one minute before whisking together
Add the butter and continue whisking until all the chocolate chips have melted and the mixture is smooth.
Pour over the top of the brownies and smooth with a spatula
Let set for around 30 minutes before devouring

Tip: Store these in the freezer in an airtight container to make them last, or eat within 3 days
