PREPARE:
Line an 8x8 pan with foil or wax paper and spray with non-stick spray
Pre-heat oven to 325*
Crust:
1 1/2 cups graham cracker crumbs
5-6 tablespoons melted butter
Directions:
- Combine the melted butter and graham cracker crumbs..
Press into the bottom of the 8x8 pan.. Make sure all crumbs are wet and the crust is pressed firmly
Bake for approximately 6-10 minutes before removing and setting the pan aside – Leave the oven on!!
Cheesecake Filling:
10 ounces cream cheese softened (do NOT use the whipped or spreadable kind)
1/4 cup sugar
1 egg
1 teaspoon vanilla
Directions:
- Cream the cream cheese and sugar then add in the egg and vanilla. Mix super well… It works better if the cream cheese is softened.. If not its ok, but you will have lumps – set aside
Cookie Dough:
5 tablespoons butter
1/3 cup light brown sugar
3 tablespoons granulated sugar
1 teaspoon vanilla
3/4 cup flour (self rising or add 1/4 tsp salt to all purpose)
2/3 cup chocolate chips
Directions:
- Cream the butter and sugars and vanilla. Slowly add in the flour. When its all mixed add in the chocolate chips.
Assembling the bars:
Directions:
-Once all of the previous three steps are complete you are ready to assemble the bars
Spread the cheesecake filling onto the prepared graham cracker crust.
Spoon the cookie dough onto the cheesecake filling making sure to use all of the dough.
Bake in the oven for around 30 minutes.
Final steps:
Remove from oven – Let chill in fridge before cutting into bars
